Oatmeal Crisp Peach Cobbler




This past Friday was the opening ceremony of the London Olympics, so of course we had to celebrate with some yummy food and great friends. Our special dessert for the evening was an Oatmeal Crisp Peach Cobbler. It was fabulous and super easy to make. Hope you enjoy!

Oatmeal Crisp Peach Cobbler
Serves 6 people
20min prep time--35min cook time
Preheat oven to 350 degrees

  • 6 cups fresh or frozen peach slices, peeled and pitted
  • 1 cup brown sugar, packed
  • 1 1/4 unbleached flour
  • 1 tablespoon lemon juice
  • 3/4 cup rolled oatmeal
  • 1 teaspoon ground cinnamon
  • 4ounces(1stick) butter, cold, cut into 8 pieces
Butter a 9x9 glass baking pan or a 2 quart stoneware baking dish. Set aside.

In a large bowl, toss peeled and pitted ripe peach slices with 1/2 cup brown sugar, 1/4 cup flour and 1 tablespoon lemon juice and arrange in prepared baking dish. Set aside. 

Combine 1 cup flour, 3/4 cup brown sugar, 3/4 cup oatmeal and 1tsp cinnamon in a bowl. Cut room temperature butter into 8 slices and mix in. Mix well with hands until looks like coarse meal.

Spread topping ingredients evenly over the peaches and bake at 350 degrees for 30-40 minutes or until peaches are bubbling through and the topping is starting to brown. Remove from oven and cool for 15 minutes or more before serving. 

~Always tastes more yummy with a scoop of vanilla ice cream on top!~

  2. i love love peach cobbler. it is one of my favorite desserts and of course it must be with vanilla ice cream. i haven't made one yet this summer but need one for sure. i'll try out your recipe
